- 1 lb ground beef
- 1 onion
- 1 clove of garlic
- 1 carrot
- 1 stick of celery
- 1 tbsp Worcestershire sauce
- 1/2 tsp dried oregano
- 1/2 tsp dried thyme
- 1 tbsp tomato puree
- 1 cup beef stock
- 1 tbsp olive oil
- 3 cups mashed potatoes
- 1/2 cup grated cheddar cheese
Start by heating your olive oil in a pan on medium heat. Once hot, add in your finely chopped onion and garlic. Cook until soft and translucent.
Next, add in your carrot and celery, which should be chopped into small pieces. Cook for another few minutes until they start to soften.
Now it’s time to add in your ground beef. Brown the meat until it’s fully cooked and no longer pink. Once the meat is fully cooked, add in your Worcestershire sauce, dried oregano, dried thyme, and tomato puree. Stir everything until it’s nicely mixed together.
Next, add in your beef stock, and bring everything to a simmer. Let that simmer gently for around 25 minutes until the liquid has reduced down, and the sauce has thickened.
While your beef mixture is simmering away, prepare your mashed potatoes. Boil some potatoes until they’re soft, and then mash them with a bit of butter and milk.
Once your beef mixture is nice and thick, transfer it to a casserole dish, and top with your mashed potatoes. Sprinkle some grated cheddar cheese on top, and pop it in the oven for around 20 minutes on 200°C.
Once your Shepherd’s Pie is out of the oven, let it cool for a few minutes before diving in. This dish is perfect for when you’re looking for something warm, comforting, and filling. And the best part? It’s so easy to make!
