Instructions

Preheat oven to 375°F.
Cook the potatoes in salted, boiling water until tender, then mash them with the milk, sour cream, salt, and pepper.
In a large skillet, heat the olive oil over medium-high heat.
Add the ground beef, onion, and garlic, cooking until the beef is browned and the onion is tender.
Drain excess fat, then stir in the flour and tomato paste, cooking for 1 minute.
Gradually add in the beef broth, stirring constantly until the mixture comes to a boil.
Add in the frozen peas and carrots, reducing the heat to low.
Cook, stirring occasionally, until the vegetables are tender and the mixture is thickened.
Stir in the chopped parsley.
Spoon the meat mixture into an 8-inch square casserole dish, then spread the mashed potatoes evenly over the top.
Bake for 25-30 minutes, or until the top is golden brown and the filling is hot and bubbling.

Quick Spiced Shepherd’s Pie from BBC Good Food

Ingredients

600g lamb mince
1 onion, finely chopped
2 garlic cloves, minced
1 teaspoon ground cinnamon
1 teaspoon ground allspice
1/2 teaspoon ground ginger
400g can chopped tomatoes
2 tablespoons tomato purée
300g potatoes, peeled and grated
50g butter, melted

Instructions

Preheat the oven to 200°C/180°C fan/gas mark 6.
Brown the lamb in a large frying pan over high heat.
Add the onion and garlic, cooking until softened.
Stir in the cinnamon, allspice, and ginger, cooking for a minute or two until fragrant.
Stir in the tomatoes and tomato purée, then season to taste with salt and black pepper.
Simmer for about 20 minutes, stirring occasionally, until the sauce has thickened.
Spread the lamb mixture into a 2-litre ovenproof dish.
Mix the grated potatoes with the melted butter, and season to taste with salt and black pepper.
Spoon the potato mixture over the lamb, spreading it out evenly.
Bake for 30-35 minutes, or until the potatoes are golden brown and the filling is hot and bubbling.
