Growing up, my mom made us a classic Shepherd’s Pie every winter. It was one of my favorite dishes, and I always looked forward to the creamy mashed potatoes on top of savory beef filling. But recently, I came across two unique versions of this classic dish that I just had to share with you all!
First up, we have a Shepherd’s Pie Recipe from A Mitten Full of Savings. This version is unique because it swaps out the traditional ground beef for ground sausage. The flavors are amazing, and the sausage adds an extra depth of savory flavor to the pie.
To make this version, start by browning a pound of ground sausage in a skillet over medium heat. Once cooked through, remove the sausage from the pan and drain any excess grease. In the same pan, cook a diced onion and three cloves of minced garlic until softened. Then, add in a bag of frozen mixed vegetables and cook until heated through. Add the sausage back into the pan, along with a can of drained and rinsed kidney beans and a cup of beef broth. Let everything simmer together for a few minutes to let the flavors meld.

Bake in a preheated 400 degree oven for 20-25 minutes, or until the cornbread is golden brown and cooked through.
For the second unique take on Shepherd’s Pie, we have a Simple Shepherd’s Pie Recipe from Lauren’s Latest. This version uses a mashed sweet potato topping instead of traditional mashed potatoes. The sweetness of the potatoes pairs perfectly with the savory beef filling.

Now, for the sweet potato topping: cook two large sweet potatoes until fork-tender. Remove the skins and mash the sweet potatoes with some butter, milk, salt, and pepper until smooth and creamy. Spread the mashed sweet potatoes over the top of the filling, and bake in a preheated 375 degree oven for 20-25 minutes, or until the topping is golden brown and heated through.
