Today, I’m sharing a delightful recipe that’s perfect for a summer gathering – pesto pasta salad. It’s the perfect blend of flavors that will tantalize your taste buds and keep your guests satisfied throughout the day. The best part? It’s an easy dish to whip up and is sure to impress your guests!
Pesto Pasta Salad Recipe
Ingredients
- 1 pound of pasta (fusilli, rotini or penne works great!)
- 1 cup of green beans, trimmed and halved
- 2 cups of cherry tomatoes, halved
- 1/2 cup kalamata olives, pitted and halved
- 1/2 cup of feta cheese, crumbled
- 1/2 cup of basil pesto (store-bought or homemade)
- 1/4 cup of white wine vinegar
- Sea Salt and black pepper to season
Instructions
- Cook the pasta according to instructions on the package. While the pasta is cooking, blanch the green beans in boiling water for 5 minutes. Drain and place the beans in a bowl of ice water to stop the cooking process.
- In a mixing bowl, whisk together basil pesto, white wine vinegar, salt, and pepper, then set aside.
- Drain the pasta and rinse with cold water, then add it to a large bowl.
- Add all other ingredients (tomatoes, olives, feta cheese and green beans) and toss together well.
- Pour the pesto dressing over the salad and toss to coat. Serve the salad chilled.
If you’re someone like me who loves bright and colorful dishes, you’ll want to add one more thing to this pasta salad- freshly sliced avocado. Yes, that’s right! Avocado would give you that perfect creamy blend, and it’s simply delicious!
Easy Pesto Pasta Recipe
Ingredients
- 1 pound of spaghetti or your preferred pasta
- 1/2 cup of basil pesto
- 1/2 cup of cherry tomatoes sliced in half
- 1/2 cup freshly grated Parmesan cheese
- A handful of fresh basil leaves, chopped
Instructions
- Cook the pasta according to the instructions on the package until it reaches al dente texture.
- Drain the pasta and add it to a large bowl.
- Stir in the cherry tomatoes and pesto until the pasta is fully coated. If you need to thin out the pesto and make it easier to coat, add in a tablespoon of olive oil or two.
- Sprinkle freshly grated Parmesan cheese over the top of your pasta and spoon over the chopped basil leaves to finish.
- Grab a fork and enjoy!
