- Soak the rice noodles in lukewarm water for about 30 minutes or until they are soft but not mushy. Drain the noodles and set aside.

- Add the firm tofu and stir-fry for 2 minutes.
- Push the tofu to the side of the wok and pour in the beaten egg. Scramble the egg until it is almost set, then mix it with the tofu.
