- 8 oz. flat rice noodles
- 2 tbsp. vegetable oil
- 2 cloves garlic, minced
- 2 chicken breasts, sliced into thin strips

- 2 cups bean sprouts
- 2 green onions, chopped
- 2 eggs, whisked
Instructions:
- Soak noodles in warm water for 30 minutes.
- In a wok or large skillet, heat 1 tbsp. of oil over medium-high heat. Add garlic and cook until fragrant.
- Add chicken and cook until browned, about 2-3 minutes per side. Remove chicken from pan and set aside.
- Add remaining tablespoon of oil to pan and add noodles. Cook for 2-3 minutes, stirring regularly.
- Add peanuts, bean sprouts, and green onions. Cook for another 2-3 minutes until vegetables are slightly softened.
- Push noodles to one side of the pan and add whisked eggs to the other side. Cook until eggs are scrambled, then mix everything together.
- Season with salt and pepper to taste.

- Pour sauce over noodles and vegetable mixture and mix everything together.
- Top with fresh cilantro and serve hot.
