Vegan Pad Thai

First things first – let’s gather all the ingredients required to make this flavorful dish:

  • 1 package of rice noodles
  • 1 tbsp of olive oil or coconut oil
  • 1 onion, chopped
  • 1-2 garlic cloves, minced
  • 1 cup of tofu, crumbled or chopped
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 4-5 green onions, sliced
  • 2 tbsp of soy sauce or tamari
  • 2 tbsp of tamarind paste
  • 1 tbsp of sugar
  • 1 lime, juiced
  • 1/4 cup of peanuts, chopped
  • Fresh cilantro, chopped

How to Make Vegan Pad Thai

Step 1: Soak the noodles in warm water for about 15-20 minutes, then drain them well and set them aside.

Step 2: In a large skillet, heat the oil over medium heat. Add the onions and garlic, and sauté for about 1-2 minutes, until the onion is translucent.

Step 3: Add the crumbled tofu, bell peppers, and sliced green onions. Stir-fry for 2-3 minutes, until the peppers are slightly softened.

Step 4: Add the soy sauce, tamarind paste, and sugar. Stir everything well and cook for a minute or two, until the sugar dissolves.

Step 5: Add the drained noodles to the skillet. Stir everything until the noodles are coated well with the sauce. Cook for another 2-3 minutes, stirring occasionally.

Step 6: Turn off the heat and add the lime juice. Mix everything well.

Sprinkle the peanuts and cilantro on top of the Pad Thai and serve hot.

  • 3 tbsp of fish sauce
  • 2 tbsp of tamarind paste
  • 1 lime, juiced

Method:

Follow the same steps as the Vegan Pad Thai recipe to cook the dish. Add shrimp and eggs after the bell peppers and stir-fry for a few minutes until the shrimp turn pink and the eggs are cooked. Then, add the roasted peanuts, bean sprouts, tamarind paste, brown sugar, and fish sauce. Mix everything well and add the noodles. Cook for a few minutes until everything blends together well. Finally, add lime juice and serve hot!
