-16 ounces fresh rice noodles
-2 chicken breasts, thinly sliced
-2 cups chopped broccoli
-1 cup sliced carrots
-1/2 cup sliced green onions
-3 cloves garlic, minced
-3 eggs
-1/4 cup vegetable oil

For the Sauce:
-1/4 cup soy sauce
-1 tablespoon oyster sauce
-1 tablespoon dark soy sauce
-1 tablespoon brown sugar
-1 tablespoon rice vinegar
-1/2 teaspoon white pepper

Directions:

1. In a small bowl, whisk together the soy sauce, oyster sauce, dark soy sauce, brown sugar, rice vinegar, and white pepper. Set aside.

2. Heat a wok or large pan over high heat. Add the vegetable oil and swirl to coat the pan.

3. Add the chicken and cook until browned, about 5 minutes.

4. Add the garlic and stir-fry for 30 seconds.

5. Add the broccoli and carrots and continue to stir-fry for another 3-4 minutes.

6. Push the chicken and vegetables to the sides of the pan to make room to add the eggs. Crack the eggs into the center of the pan and scramble until cooked.

7. Add the noodles and toss everything together.

8. Pour the sauce over the noodles and stir-fry until the noodles are evenly coated and everything is heated through.

9. Serve hot, garnished with sliced green onions.
