Ingredients:
- 12 ounces of dried rice noodles
- 1/2 pound of medium-sized shrimp, peeled and deveined
- 1/2 cup of firm tofu, cut into small cubes
- 3 cloves of garlic, minced
- 1/2 cup of shallots, sliced
- 2 tablespoons of vegetable oil
- 3 tablespoons of fish sauce
- 2 tablespoons of sugar
- 1 tablespoon of tamarind paste
- 1/2 teaspoon of paprika
- 1/2 cup of roasted peanuts, chopped
- 2 cups of bean sprouts
- 4 green onions, thinly sliced
- 2 eggs, lightly beaten
- Lime wedges for serving
Instructions:
- Soak the rice noodles in warm water for about 20 minutes.
- Combine fish sauce, sugar, tamarind paste, and paprika in a small bowl and set aside.
- Heat the vegetable oil in a large wok or skillet over medium-high heat.
- Add garlic and shallots and cook until fragrant, about 30 seconds.
- Add shrimp and tofu and cook for about a minute.
- Push the shrimp and tofu to one side of the wok or skillet and add the beaten eggs to the other side.
- Stir the eggs until scrambled and then mix them in with the shrimp and tofu.
- Add the soaked rice noodles and the fish sauce mixture to the wok or skillet and toss to combine all ingredients.
- Stir in bean sprouts, peanuts, and green onions.
- Serve hot with lime wedges.
