Creamy Chicken and Pesto Pasta
Ingredients:
- 1 pound of boneless, skinless chicken thighs
- 1 pound of pasta
- 1/2 cup of pesto
- 1/2 cup of heavy cream
- Salt and pepper to taste
- Fresh parsley to garnish
Instructions:
- Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, according to package instructions.
- While the pasta cooks, prepare the chicken. Season both sides of the chicken with salt and pepper. Heat a large skillet over medium heat and add a tablespoon of oil. Once hot, add the chicken and cook for 5-6 minutes per side, or until cooked through. Remove from the skillet and set aside.
