S’mores Bars
Ingredients:
- 1 cup unsalted butter, room temperature
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar, packed
- 2 large eggs, room temperature
- 2 tsp vanilla extract
- 2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup semi-sweet chocolate chips
- 1 cup mini marshmallows
Instructions:
- In a large bowl, cream together butter and sugars until light and fluffy.
- Add eggs one at a time, mixing well after each addition.
- Mix in vanilla extract.
- In a separate, medium bowl, whisk together flour, baking powder, baking soda, and salt.
- Gradually mix dry ingredients into wet mixture, mixing until just combined.
- Fold in chocolate chips and mini marshmallows.
- Press dough evenly into a greased 9×13 inch baking pan.
- Bake at 350°F for 25-30 minutes, or until golden brown.
Homemade Marshmallow Fluff
Ingredients:
- 1/4 cup water
- 3/4 cup granulated sugar
- 3/4 cup corn syrup
- 3 large egg whites, room temperature
- 1 tsp vanilla extract
Instructions:
- In a medium saucepan, heat water, sugar, and corn syrup over medium heat, stirring constantly until sugar is dissolved.
- Attach a candy thermometer to the side of the pan and increase heat to high. Cook mixture, without stirring, until temperature reaches 240°F.
- Meanwhile, using a stand mixer or hand mixer, beat egg whites until stiff peaks form.
- Once the sugar mixture has reached 240°F, slowly stream it into the beaten egg whites, beating on high speed continuously.
- Continue beating for 7-10 minutes, or until mixture is thick and fluffy.
- Mix in vanilla extract.
