Japanese Seafood Soup #1
Ingredients:
- 1 tbsp vegetable oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 inch piece fresh ginger, grated
- 1 red chilli, finely chopped
- 4 cups fish or chicken stock
- 1 can coconut milk
- 1 1/2 tbsp red curry paste
- 1 tbsp fish sauce
- 1 lb shrimp, peeled and deveined
- 1 can pineapple chunks, drained
- 1 tbsp lime juice
- Salt and pepper to taste
Instructions:
- Heat oil in a large pot over medium heat.
- Add onion, garlic, ginger and chilli and cook for 3-4 minutes until softened.
- Add stock, coconut milk, curry paste and fish sauce to the pot and bring to a simmer.
- Add shrimp and pineapple and cook for 3-4 minutes or until shrimp is cooked through.
- Add lime juice, salt and pepper to taste and serve hot.
Japanese Seafood Soup #2
Ingredients:
- 1 tbsp vegetable oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 inch piece fresh ginger, grated
- 4 cups fish or chicken stock
- 8 oz clams
- 8 oz mussels
- 1/2 lb shrimp, peeled and deveined
- 1/2 lb scallops
- 1 tbsp soy sauce
- 1 tbsp sake or dry white wine
- 1 tbsp mirin
- 1 tsp sugar
- 1 tbsp cornstarch mixed with 3 tbsp water
- Salt and pepper to taste
Instructions:
- Heat oil in a large pot over medium heat.
- Add onion, garlic and ginger and cook for 3-4 minutes until softened.
- Add stock and bring to a simmer.
- Add clams, mussels, shrimp and scallops and cook until seafood is cooked through.
- Remove seafood from the pot and set aside.
- Add soy sauce, sake, mirin, sugar, salt and pepper to the pot and bring to a boil.
- Add cornstarch mixture to the pot and stir until the soup thickens.
- Divide seafood into bowls and pour soup over the top.
