Classic Sauerkraut Recipe
Ingredients
- 1 head of cabbage
- 1 tablespoon salt
- 1 tablespoon caraway seeds
Instructions
- Remove any tough outer leaves from the cabbage and set aside.
- Quarter the cabbage, remove the core, and thinly slice the leaves.
- Place the sliced cabbage into a large bowl and sprinkle with the salt and caraway seeds. Mix everything together well using your hands.
- Let the mixture sit for about an hour, allowing the salt to draw out the water from the cabbage.
- After an hour, use your hands to massage the mixture for several minutes, until the cabbage is wilted and has released even more liquid.
- Pack the mixture tightly into a clean jar, pressing down firmly with your fingers to remove any air pockets.
- Roll up one or two of the outer leaves you set aside and place them on top of the cabbage, acting as a natural weight to keep the cabbage submerged.
- Screw on the lid and place the jar in a cool, dark place for 1-4 weeks, depending on how tangy you like your sauerkraut.
- Once the desired fermentation has been reached, remove the weight and outer leaves, screw on a new lid, and store the jar in the fridge.
Cabbage and Onion with Caraway Seeds Recipe
Ingredients
- 1 head of cabbage, thinly sliced
- 1 large onion, thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon caraway seeds
- 1 teaspoon salt
- ½ teaspoon black pepper
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the onion to the skillet and cook until it starts to soften, about 5 minutes.
- Add the sliced cabbage, caraway seeds, salt, and black pepper to the skillet and mix everything together well.
- Cover the skillet and cook for 20-30 minutes, stirring occasionally, until the cabbage is tender.
- Serve as a side dish or on top of a sandwich for added flavor and crunch.
