Cabbage Potato Pie
Ingredients:
- 1 large head of cabbage
- 4-5 large potatoes, peeled and diced
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 cup of milk
- 3 tbsp of butter
- 1/2 cup of breadcrumbs
- Salt and pepper to taste
Instructions:
- Preheat your oven to 375°F.
- Bring a large pot of salted water to a boil. Add your diced potatoes and cook until tender (around 10-15 minutes).
- In another pot, cook your cabbage until it’s soft but not mushy (around 10 minutes).
- Melt your butter in a frying pan and add your onions and garlic. Fry until they’re soft and fragrant.
- Put your cooked potatoes, cabbage, onions, garlic, milk, breadcrumbs, salt, and pepper into a large mixing bowl. Mix everything together until you have a nice, chunky consistency.
- Pour your mixture into a 9-inch baking dish.
- Bake in your preheated oven until the top is golden brown (around 40 minutes).
- Serve hot, with a dollop of butter on top if you’re feeling fancy.
Now, I know some of y’all might be wondering what to do with the rest of that cabbage in your fridge. Well, luckily for you, I found another recipe that’ll knock your socks off. You ever heard of Cabbage Rolls? They’re like little bundles of heaven. Here’s what you’ll need:
Cabbage Rolls
Ingredients:
- 1 head of cabbage
- 1 1/2 lbs of ground beef
- 1/2 cup of uncooked rice
- 1 onion, chopped
- 1 tsp of paprika
- 1 tsp of garlic powder
- 1 tsp of dried thyme
- 1 tsp of salt
- 1/2 tsp of black pepper
- 1 can of tomato sauce
- 1/2 cup of water
Instructions:
- Fill a large pot with water and bring to a boil. Add your cabbage and cook until the leaves are tender (around 15-20 minutes). Remove the cabbage from the pot and let it cool.
- In a large mixing bowl, combine your ground beef, uncooked rice, chopped onion, paprika, garlic powder, thyme, salt, and black pepper. Mix everything together.
- Carefully remove the cabbage leaves one by one and place them flat on a cutting board. Cut off the hard rib at the bottom of each leaf.
- Place a spoonful of your beef mixture in the center of each cabbage leaf. Fold the sides of the leaf inward and then roll up the entire thing.
- Place your cabbage rolls into a large pot. Pour your tomato sauce and water over them.
- Cover your pot and simmer on low heat for around 45 minutes. Make sure your rice is cooked and your meat is no longer pink before serving.
- Serve hot, with some crusty bread to soak up all that delicious sauce.
