To get started, you’ll need two large butternut squashes, peeled and diced, along with a few other key ingredients:
Roasted Butternut Squash Soup
Ingredients:
- 2 large butternut squashes, peeled and diced
- 1 onion, chopped
- 4 cloves of garlic, minced
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 1/4 cup chopped fresh parsley
- 1/4 cup grated Parmesan cheese
Instructions:
- Preheat your oven to 400 degrees. Toss the diced squash with the olive oil, salt, and pepper. Spread it out in a single layer on a baking sheet and roast in the oven for 30-40 minutes, stirring once or twice, until the squash is tender and caramelized.
- While the squash is roasting, heat a large pot over medium heat. Add the chopped onion and cook for 3-4 minutes, until softened. Add the garlic and cook for another minute.
- Add the roasted squash to the pot, along with the chicken or vegetable broth. Bring to a simmer and cook for 10-15 minutes, until the soup has thickened slightly.
- Using an immersion blender, puree the soup until smooth and creamy. (If you don’t have an immersion blender, you can transfer the soup to a blender and puree it in batches.)
- Stir in the heavy cream, fresh parsley, and grated Parmesan cheese. Cook for another 5-10 minutes, until the cheese has melted and the soup is heated through.
- Season to taste with salt and pepper, and serve hot.
