Instructions

Combine enchilada sauce and chilies; pour half into a greased 11×7-in. baking dish.
Top with half of the tortillas, beef mixture, and cheese.
Repeat layers.
Cover and bake for 25 minutes.
Uncover; bake 5-10 minutes longer or until bubbly.

Bacon Cheeseburger Soup

1 teaspoon dried basil
1 teaspoon dried parsley flakes
1/4 teaspoon pepper
1/2 cup bacon bits
1 cup half-and-half cream

Instructions

In a large saucepan or Dutch oven, cook beef over medium heat until no longer pink; drain.
Add the tomatoes, broth, soup, vegetables, and seasonings; bring to a boil.
Reduce heat; simmer for 30 minutes or until soup is heated through and vegetables are tender.
Stir in bacon and cream; heat through.
