Slow-Cooker Ratatouille

  • 1 eggplant, diced
  • 2 zucchinis, sliced
  • 1 red pepper, diced
  • 1 yellow pepper, diced
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 1 can (28 ounces) diced tomatoes, undrained
  • 2 teaspoons dried basil
  • 2 teaspoons dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions:

Begin by prepping all of your vegetables. Dice the eggplant, chop the onion, and slice the zucchinis and peppers. Mince the garlic cloves and set aside.

In a large slow cooker, combine the diced tomatoes and all of the vegetables. Add the basil, thyme, salt, and pepper and stir to combine.

Cover the slow cooker and cook on low heat for 6-8 hours, or until the vegetables are tender and the flavors have melded together.

Serve hot as a side dish or main entree. This recipe pairs well with crusty bread or a side salad.

Traditional Ratatouille

Add the eggplant to the skillet and cook until it is slightly tender, about 10 minutes. Add the zucchinis and peppers and cook for an additional 5 minutes.

Stir in the crushed tomatoes and fresh herbs and reduce the heat to low. Simmer for 15-20 minutes, or until the vegetables are tender and the flavors have melded together.

Serve hot as a side dish or main entree. This recipe pairs well with crusty bread or a side salad.
