This dish combines all the delicious flavors of a traditional ratatouille with the magic of Disney to create a one-of-a-kind culinary experience.
To start, preheat your oven to 375 degrees Fahrenheit. For this recipe, you will need:
– 1 eggplant, sliced into 1/4 inch rounds
– 1 zucchini, sliced into 1/4 inch rounds
– 1 yellow squash, sliced into 1/4 inch rounds
– 1 red bell pepper, sliced into thin strips
– 1 yellow onion, sliced into thin strips
– 3 cloves garlic, minced
– 1 can diced tomatoes, drained
