- 4 slices of bacon, chopped

- 2 cups of chicken broth
- 1 cup of heavy cream
- 1 tsp of salt
- 1/2 tsp of black pepper
- 1/4 tsp of dried thyme
- 2 bay leaves
- 2 tbsp of cornstarch
- 2 tbsp of cold water
- Chopped fresh parsley, for garnish
Instructions
- In a large pot, cook bacon until crispy. Remove the bacon from the pot and set aside on a paper towel-lined plate.
- Drain the bacon fat and return 2 tablespoons of it to the pot. Sauté the onion, celery, and garlic until they are softened.
- Add the reserved clam juice, chicken broth, potatoes, salt, pepper, thyme, and bay leaves to the pot. Bring the mixture to a boil, then reduce the heat to medium-low, cover and simmer until the potatoes are tender, stirring occasionally. This should take about 15-20 minutes.
- In a small bowl, whisk together cornstarch and water until smooth. Add the mixture to the pot and stir well. Allow it to simmer until the mixture has thickened. This should take about 2-3 minutes.
- Stir in the clams, bacon, and heavy cream. Simmer until hot. This should take about 2-3 minutes.
- Remove bay leaves and serve hot, garnished with fresh parsley.
