Let me tell you, this clam chowder recipe is something special. It’s perfect for a chilly night in, or as a luxurious addition to any dinner party menu. But don’t take my word for it – try it out yourself!
American Clam Chowder
Ingredients:
- 2 pounds fresh clams, scrubbed clean
- 4 slices bacon
- 1 onion, diced
- 2 stalks celery, diced
- 2 garlic cloves, minced
- 1 bay leaf
- 1/4 cup all-purpose flour
- 4 cups milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons butter
- 2 tablespoons chopped parsley
Instructions:
- In a large pot, steam the clams until they open. Discard any clams that do not open. Reserve the clam broth and set aside.
- In a separate pot, cook bacon until crisp. Remove from pan and crumble. Set aside.
- In the same pan, sauté onion, celery and garlic until softened.
- Add bay leaf and flour, stirring for 1 minute.
- Gradually stir in milk and reserved clam broth.
- Add salt and pepper to taste.
- Simmer for 15 minutes.
- Stir in reserved clams, crumbled bacon, butter and parsley until the butter is melted.
- Serve hot, garnished with extra chopped parsley.
South American Clam Chowder
Ingredients:
- 2 pounds fresh clams, scrubbed clean
- 2 tablespoons olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 2 potatoes, diced
- 3 ears corn, kernels removed
- 4 cups chicken stock
- 1/2 cup heavy cream
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped cilantro
Instructions:
- In a large pot, steam the clams until they open. Discard any clams that do not open. Reserve the clam broth and set aside.
- In a separate pot, heat olive oil and sauté onion and garlic until softened.
- Add potatoes and corn kernels. Stir for 2 minutes.
- Pour in chicken stock and bring to a boil.
- Simmer until potatoes are cooked, about 15 minutes.
- Stir in heavy cream, salt and pepper.
- Simmer for an additional 5 minutes.
- Add reserved clams and cilantro.
- Serve hot.
