Creamy Clam Chowder
Ingredients:
- 4 slices bacon, cut into small pieces
- 1 onion, chopped
- 2 garlic cloves, chopped
- 1/4 cup all-purpose flour
- 3 cups chicken broth
- 1 cup heavy cream
- 4 medium potatoes, peeled and diced
- 2 cans (6.5 ounces each) chopped clams, drained, juices reserved
- 1 bay leaf
- Salt and pepper
- Chopped fresh parsley, for garnish
Instructions:
- In a large pot, cook the bacon over medium heat until crispy. Remove with a slotted spoon and set aside.
- Add the onion and garlic to the pot and cook until softened, about 5 minutes.
- Sprinkle the flour over the onions and garlic and cook, stirring constantly, for 1 minute.
- Gradually whisk in the chicken broth and heavy cream.
- Add the potatoes, clams with their juices, bay leaf, and salt and pepper to taste.
- Bring to a boil, then reduce the heat and simmer until the potatoes are tender, about 20 minutes.
- Remove the bay leaf and stir in the reserved bacon.
- Serve hot, garnished with chopped parsley.
