- 2 tablespoons unsalted butter

- 3 cups chicken broth

- 2 lbs. Yukon Gold potatoes, peeled and diced
- 3 (6.5 oz) cans chopped clams, drained, liquid reserved
- Salt and pepper, to taste
Instructions
- In a large pot or Dutch oven, melt the butter over medium heat. Add the onion, celery, garlic, thyme, and bay leaf. Cook, stirring occasionally, until the vegetables are tender and just beginning to brown, about 10 minutes.
- Add the chicken broth, 2 cups milk, and potatoes. Bring to a simmer and cook until the potatoes are tender, about 15 minutes.
- Remove the bay leaf and discard. Using a potato masher or immersion blender, slightly mash the potatoes to thicken the soup. Stir in the clams, reserved clam liquid, remaining 1 cup milk, and salt and pepper to taste. Simmer until the soup is heated through and the clams are cooked, about 5 minutes.
- Remove from heat and let cool slightly. Serve hot and enjoy!
