Easy Clam Chowder
This recipe from Damn Delicious truly lives up to its name! With just a few simple ingredients, you can have a delicious clam chowder in no time.
Ingredients:
- 4 slices bacon, diced
- 2 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1 onion, diced
- 2 carrots, peeled and diced
- 2 stalks celery, diced
- 1/4 cup all-purpose flour
- 3 cups chicken stock
- 1 cup milk
- 1 bay leaf
- 1/2 teaspoon dried thyme
- 1 pound Yukon Gold potatoes, peeled and diced
- 3 (6.5-ounce) cans chopped clams, drained, juice reserved
- Salt and freshly ground black pepper, to taste
- 2 tablespoons chopped fresh parsley leaves
Instructions:
- In a large pot or Dutch oven over medium heat, cook bacon until brown and crispy. Remove from pot and set aside.
- Add butter to the same pot; melt over medium heat. Add garlic, onion, carrots, and celery. Cook, stirring occasionally, until vegetables are tender, about 5 minutes.
- Whisk in flour until lightly browned, about 1 minute.
- Gradually whisk in chicken stock, milk, reserved clam juice, bay leaf, and thyme, stirring constantly. Add potatoes and bring to a boil; reduce heat and simmer until potatoes are tender, about 15 minutes.
- Stir in clams and heat through, about 2 minutes; season with salt and pepper, to taste.
- Serve immediately, garnished with bacon and parsley, if desired.
