– 1 head of Napa cabbage
– 1/4 cup of sea salt
– 1 bunch of scallions, chopped
– 1 small onion, chopped
– 1/4 cup of grated ginger
– 6 cloves of garlic, minced
– 2 tablespoons of soy sauce
– 2 tablespoons of rice vinegar
– 1 tablespoon of agave syrup
– 1 tablespoon of red pepper flakes
– 1 tablespoon of sesame oil

Now that you have everything you need, it’s time to start cooking. Begin by separating the cabbage leaves and cutting them into bite-sized pieces. Place the chopped cabbage into a large bowl and add the sea salt. Massage the salt into the cabbage leaves until it begins to release its water. Let sit for at least an hour.

While the cabbage is sitting, mix together the chopped scallions, small onion, grated ginger, minced garlic, soy sauce, rice vinegar, agave syrup, red pepper flakes, and sesame oil in a separate bowl. Once the hour is up, rinse the cabbage leaves thoroughly with cold water and drain well.

Next, add the scallion mixture to the cabbage and mix well. Using a clean jar, pack the kimchi mixture tightly, leaving about an inch of space at the top. Seal the jar and leave it at room temperature for 1-5 days, depending on how strong you like your kimchi. After 1-5 days, move the jar to the refrigerator and enjoy as a delicious side dish or topping for your favorite Korean dishes!
