Bok Choy Kimchi Recipe
Ingredients:
- 4 heads of baby Bok Choy
- 1/4 cup sea salt
- 1 1/2 cups water
- 1/2 cup Korean red pepper flakes
- 1/4 cup fish sauce
- 2 tablespoons minced garlic
- 1 tablespoon minced ginger
- 2 tablespoons sugar
- 3 chopped green onions
Directions:
- Wash and chop the bok choy into bite-sized pieces.
- In a large bowl, mix salt and water until dissolved. Add the bok choy and let sit for 2-3 hours.
- Rinse the bok choy well and drain off excess water.
- In a separate bowl, combine Korean pepper flakes, fish sauce, garlic, ginger, sugar, and green onions. Mix well.
- Add the bok choy to the seasoning mixture and mix well with your hands.
- Transfer the mixture into a clean glass jar and press down firmly to remove any air bubbles. Cover with a lid and let ferment at room temperature for 1-2 days.
- After 1-2 days, check the taste of the kimchi. If it’s sour enough, transfer it to the refrigerator to slow down the fermentation process. If you prefer a stronger taste, let it ferment for another day or two.

Bok Choy Kimchi Variation
