- 2 tablespoons oil
- Salt and freshly ground black pepper to taste
Instructions:
- In a large bowl, mix together the ginger, garlic, turmeric, cumin, paprika, coriander, cayenne pepper, and salt. Add the chicken pieces and coat them evenly with the spices, then cover and refrigerate for 30 minutes to 1 hour.
- Heat a large skillet over medium-high heat and add the oil. When the oil is hot, add the chicken pieces in batches and cook for a few minutes on each side until golden brown. Remove the chicken from the skillet and set aside.
- Add the onions and a pinch of salt to the same skillet and cook until softened and lightly browned, about 5 minutes. Add the tomato paste and cook for another minute until fragrant.

- Open the heat to low, pour in the heavy cream or coconut milk and stir until the sauce is heated through and well combined.
- Return the chicken to the skillet and simmer for 10 minutes until it is cooked through and coated in the sauce. Add salt to taste.
- Garnish with cilantro leaves if desired and serve hot with rice or naan.
