I’m a huge fan of Indian cuisine and there’s nothing quite like the creamy and spicy flavors of chicken tikka masala. Lucky for me, I recently discovered a few easy and delicious recipes that I can’t wait to share with you!
First up, we have a recipe from BowlofDelicious.com that will have you drooling in no time. To start, preheat your oven to 375°F and line a baking sheet with parchment paper. Cut 1 pound of boneless, skinless chicken breasts into bite-sized pieces and marinate in a mixture of 1 cup of plain yogurt, 1 tablespoon of garam masala, 2 teaspoons of paprika, 2 teaspoons of cumin, 1 teaspoon of turmeric, 1 tablespoon of grated ginger, and 2 cloves of minced garlic for at least 30 minutes (overnight is even better!). Once marinated, place the chicken on the baking sheet and cook for 20-25 minutes until lightly browned.
While the chicken is cooking, you can start on the sauce. In a large saucepan, melt 4 tablespoons of butter over medium heat before adding 1 chopped onion and sautéing until translucent. Add 2 cloves of minced garlic and 2 teaspoons of grated ginger and cook for an additional minute. Stir in 1 tablespoon of garam masala, 2 teaspoons of paprika, and 1 teaspoon of cumin before adding a 28-ounce can of crushed tomatoes, ½ cup of heavy cream, and 1 teaspoon of salt. Bring the mixture to a simmer, stirring occasionally, until the sauce has thickened and the flavors have melded together.
To assemble the dish, stir the cooked chicken into the sauce and serve hot over rice with a sprinkle of fresh cilantro.
Next, we have an equally delicious recipe from The Schmidty Wife that will become a staple in your meal rotation. Start by heating a large skillet over medium-high heat and adding 1 tablespoon of olive oil. Add 1 pound of cubed chicken breast and season with salt and pepper before cooking until browned on all sides. Remove the chicken from the skillet and set aside.
In the same skillet, add another tablespoon of olive oil and sauté 1 chopped onion until tender. Add 4 cloves of minced garlic and cook for an additional 30 seconds before adding 1 tablespoon of garam masala, 1 teaspoon of smoked paprika, 1 teaspoon of ground ginger, and 1 teaspoon of ground turmeric. Cook for 1-2 minutes until fragrant before stirring in a 15-ounce can of tomato sauce and 1 cup of chicken broth.
Bring the mixture to a simmer and stir in ½ cup of heavy cream and the cooked chicken before covering the skillet and simmering for 10-15 minutes until the sauce has thickened and the chicken is fully cooked. Serve hot over rice with a sprinkle of fresh cilantro.
