But who has the time to slave over a hot stove for hours? Not me, that’s for sure. That’s why I love this Instant Pot chicken tikka masala recipe. It’s quick, easy, and packed full of flavor.
Instant Pot Chicken Tikka Masala Recipe
Ingredients
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 onion, diced
- 2 cloves garlic, minced
- 1 Tbsp fresh ginger, grated
- 1 can diced tomatoes
- 1/2 cup plain yogurt
- 2 Tbsp garam masala
- 1 Tbsp paprika
- 1/2 tsp turmeric
- 1/2 tsp cumin
- 1/2 tsp salt
- 1/4 tsp cayenne pepper
- 1/4 cup heavy cream
- Fresh cilantro, chopped (optional)
Instructions
- Turn the Instant Pot on to the sauté setting. Add the onion, garlic, and ginger and cook until soft.
- Add the chicken and cook until browned on all sides.
- Add the diced tomatoes and all the spices. Stir to combine.
- Close the lid and set the Instant Pot to manual high pressure for 8 minutes.
- When the timer goes off, do a quick release of pressure.
- Stir in the yogurt and heavy cream.
- Serve over rice and top with fresh cilantro, if desired.
