- 1/2 teaspoon ground coriander
- 1/2 teaspoon ground ginger
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon tomato paste
- 1 can diced tomatoes
- 1 cup heavy cream
- 1 teaspoon sugar
- 1/2 teaspoon garam masala
- Salt and pepper, to taste
- 1/4 cup chopped fresh cilantro, for garnish (optional)
Instructions
- In a small bowl, mix together the garam masala, cumin, turmeric, paprika, salt, black pepper, coriander, and ginger.
- Add the chicken to the bowl and toss in the spice mixture until the chicken is well coated.
- Heat 1 tablespoon of the oil in a large skillet over medium-high heat. Add the chicken and cook, stirring occasionally, until browned and cooked through, about 5-7 minutes. Transfer the chicken to a plate and set aside.
- Heat the remaining tablespoon of oil in the same skillet over medium heat. Add the onion and cook, stirring occasionally, until softened and lightly browned, about 5-7 minutes. Add the garlic and cook for an additional 1-2 minutes.
- Add the tomato paste and stir to combine. Cook for 1 minute before adding the diced tomatoes, heavy cream, sugar, remaining garam masala, salt, and pepper to taste.
- Bring the sauce to a simmer and cook for about 15 minutes, until it has thickened slightly.
- Stir in the cooked chicken and simmer for an additional 5 minutes, until the chicken is heated through and the sauce has thickened to your liking.
- Remove from heat and garnish with fresh cilantro, if desired. Serve hot over steamed rice or with naan bread.
