P, my friends! Today we’re talking about one of my all-time favorite dishes: paneer tikka masala. Now, I know some of y’all might be wondering what paneer is. Well, it’s a type of cheese that’s common in Indian cuisine. And when you marinate it in some delicious spices and grill it up, you get paneer tikka – which is just heavenly.
But what takes paneer tikka to the next level is when you mix it into a creamy, dreamy tomato-based sauce – that’s where the masala comes in. The combination of smoky grilled cheese with the rich, spicy sauce is like nothing else on earth. And lucky for y’all, I’ve got not one but TWO fantastic paneer tikka masala recipes to share with you today.
First up is this recipe from Edible Garden. Y’all, just looking at this picture is making my mouth water. To make this dish, you’ll need:
– 250 g paneer
– 1/2 cup yogurt
– 1 tsp red chili powder
– 1 tsp coriander powder
– 1/2 tsp cumin powder
– 1/2 tsp garam masala powder
– Salt to taste
– 1 tbsp oil
– 1 onion, finely chopped
– 1 tsp garlic paste
– 1 tsp ginger paste
– 2 medium-sized tomatoes, pureed
– 1 tsp red chili powder
– 1/2 tsp turmeric powder
– 1 tsp coriander powder
– 1/2 tsp cumin powder
– 1/2 tsp garam masala powder
– 1/2 cup water
– 1/4 cup cream
– Chopped coriander leaves for garnish
To start, we’re gonna make our paneer tikka. Cut your paneer into cubes and mix together the yogurt, red chili powder, coriander powder, cumin powder, garam masala powder, and salt. Toss the paneer in this mixture until it’s all coated, then grill it up until it’s nice and browned.
Now, on to the masala. Heat up your oil in a pan and add the chopped onion. Cook until it’s nice and golden, then add the garlic and ginger paste. Cook for about a minute before adding the tomato puree and all of your spices. Let this cook for a few minutes, then add the water and bring the whole thing to a boil.
Once it’s boiling, lower the heat and add your cream. Give it a good stir and let everything cook together for a few more minutes. Finally, add in your grilled paneer and let it simmer in the sauce for a little bit to really soak up all of those delicious flavors. Top with some fresh coriander and serve with naan or rice!
Now, for our second recipe. This one comes from Swasthi’s Recipes and it looks just as incredible. To make it, you’ll need:
– 250 g paneer
– 1/2 cup yogurt
– 1/2 tsp red chili powder
– 1/2 tsp cumin powder
– 1/2 tsp coriander powder
– 1/2 tsp garam masala powder
– 1/4 tsp turmeric powder
– Salt to taste
– 1 tbsp oil
– 1 bay leaf
– 1 cinnamon stick
– 2 green cardamoms
– 1 black cardamom
– 1 mace
– 1 star anise
– 1 cup onion, finely chopped
– 1 tsp ginger garlic paste
– 2 medium-sized tomatoes, pureed
– 1/2 tsp red chili powder
– 1/4 tsp turmeric powder
– 1 tsp garam masala powder
– 1/4 to 1/2 cup water
– 1/4 cup cream
– Chopped coriander leaves for garnish
We’re gonna start this recipe the same way we did the last one – by marinating our paneer in some spices and yogurt and grilling it up. Once that’s done, it’s time to make our masala.
Heat up your oil in a pan and add all of your whole spices – bay leaf, cinnamon stick, cardamoms, mace, and star anise. After a few seconds, add in your chopped onion and cook until it’s golden brown. Then, add in your ginger garlic paste and cook for another minute or so before adding in your tomato puree and spices.
Let all of this cook together for a few minutes until the oil starts to separate, then add your water. Once it’s boiling, lower the heat and let everything simmer for a little while. Finally, add in your paneer and cream and let the whole thing cook together for a few more minutes until it’s nice and creamy.
