Chicken Tikka Masala
Ingredients:
- 1 lb boneless, skinless chicken breast, diced
- 1 onion, diced
- 4 garlic cloves, minced
- 2 tbsp ginger, minced
- 1 can (14 oz) diced tomatoes
- 1 cup heavy cream
- 2 tbsp olive oil
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp turmeric
- 1 tsp paprika
- 1 tsp garam masala
- 1 tsp salt
- Chopped fresh cilantro, for garnish
Instructions:
- Heat olive oil in a large skillet over medium-high heat. Add onions and cook until they start to brown, about 5 minutes. Add garlic and ginger and cook for another 1-2 minutes until fragrant.
- Add diced chicken to the skillet and cook until browned on all sides, about 8-10 minutes.
- Add in the diced tomatoes, cumin, coriander, turmeric, paprika, garam masala, and salt. Stir to combine and reduce heat to low. Simmer for 10 minutes.
- Pour in the heavy cream and stir to combine. Allow to simmer for another 5-10 minutes to allow flavors to meld together.
- Serve over hot rice and garnish with cilantro.
