Chicken Tikka Masala
Ingredients:
- 1 lb boneless, skinless chicken breasts, cubed
- 1 cup plain yogurt
- 2 tablespoons lemon juice
- 2 teaspoons ground cumin
- 2 teaspoons paprika
- 1 teaspoon ground cinnamon
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1/2 teaspoon ground ginger
- 1/2 teaspoon cayenne pepper
- 3 tablespoons ghee or butter
- 1 onion, finely chopped
- 4 cloves garlic, minced
- 1 tablespoon grated fresh ginger
- 2 teaspoons garam masala
- 1 teaspoon ground turmeric
- 1 can tomato sauce (15 oz)
- 1 can coconut milk (14 oz)
- 1/2 cup cilantro leaves, chopped
- Basmati rice, for serving
Directions:
Step 1: In a large bowl, combine the chicken, yogurt, lemon juice, cumin, paprika, cinnamon, black pepper, salt, ginger, and cayenne pepper. Cover and refrigerate for at least 1 hour, or up to 24 hours.
Step 2: Preheat the broiler or grill to high heat. Thread the chicken onto skewers and discard the marinade. Broil or grill the chicken until cooked through, turning occasionally, about 10 minutes.
Sauce:
Step 1: In a large saucepan or Dutch oven, melt the ghee or butter over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and ginger and cook for 1 minute.
Step 2: Add the garam masala and turmeric and cook for 1 minute, stirring constantly. Add the tomato sauce and coconut milk and bring to a simmer. Cook for 15 minutes, stirring occasionally.
Step 3: Add the cooked chicken to the sauce and stir to combine. Cook for an additional 5 minutes. Garnish with cilantro leaves and serve over hot basmati rice.
