Crockpot Chicken Tikka Masala
Ingredients:
- 1.5 lbs boneless, skinless chicken thighs, cut into bite-size pieces
- 1 large onion, diced
- 4 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 2 tbsp tomato paste
- 1/2 cup chicken broth
- 1 can (14 oz) diced tomatoes
- 1 tbsp garam masala
- 1 tsp paprika
- 1 tsp turmeric
- 1 tsp cumin
- 1/2 tsp ground coriander
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup heavy cream or coconut cream for dairy-free version
- Chopped fresh cilantro or parsley, for garnish
- Basmati rice and naan, for serving
Instructions:
- In a large bowl, toss the chicken with onion, garlic, ginger, tomato paste, and ¼ cup chicken broth until well coated.
- In a 6-quart slow cooker, combine the chicken mixture with diced tomatoes, garam masala, paprika, turmeric, cumin, coriander, salt, and black pepper. Stir well to combine.
- Cover and cook on high for 3 to 4 hours or on low for 6 to 8 hours, until the chicken is cooked through and tender.
- Stir in heavy cream and remaining chicken broth until well combined. Continue to cook on low for another 10 to 15 minutes until heated through.
- Season with salt and black pepper to taste. Garnish with chopped cilantro or parsley before serving with basmati rice and naan.

- In a large bowl, whisk together the yogurt, onion, garlic, ginger, paprika, cumin, turmeric, chili powder, cinnamon, and salt until well combined.
- Add the chicken to the bowl and toss until well coated with the yogurt mixture.
- Transfer the chicken and yogurt mixture to a 6-quart slow cooker and add crushed tomatoes. Stir well to combine.
- Cover and cook on low for 6 to 8 hours, until the chicken is cooked through and tender.
- Stir in heavy cream until well combined. Continue to cook on low for another 10 to 15 minutes until heated through.
- Season with salt to taste. Garnish with chopped cilantro or parsley before serving with basmati rice and naan.
