- 1 tsp smoked paprika

- 1/2 tsp cinnamon
- 1/2 tsp cumin

- 1 can (14 oz) diced tomatoes, undrained
- 2 tbsp tomato paste
- 1/4 cup chopped cilantro

- Preheat your oven to 400°F. Line a baking sheet with parchment paper.
- In a large bowl, whisk together the coconut milk, ghee or coconut oil, onion, garlic, ginger, garam masala, smoked paprika, turmeric, cinnamon, cumin, salt, and black pepper.
- Add the chicken to the bowl and toss to coat well. Spread the chicken out on the prepared baking sheet and bake for 20 minutes.
- While the chicken is baking, heat a large skillet over medium heat. Add the diced tomatoes and tomato paste and bring to a simmer. Cook for 10 minutes, stirring occasionally.
- When the chicken is done, add it to the skillet and simmer for 5 minutes, until the sauce is thickened and the chicken is fully cooked.
- Stir in the cilantro and serve hot.
