Ingredients:
– 1 block of firm tofu, diced

– 1/2 tsp turmeric
– salt and pepper, to taste

– 1 can of diced tomatoes
– 1/2 cup raw cashews
– 1 onion, diced
– 3 garlic cloves, minced
– 1 tsp ginger, grated
– 1 tsp cumin
– 1 tsp coriander
– 1 tsp garam masala
– 1/2 tsp turmeric
– 1/4 tsp cayenne pepper (optional)
– 1/2 cup water or vegetable broth
– salt and pepper, to taste
Instructions:
1. In a bowl, mix together the yogurt, garlic, ginger, cumin, coriander, garam masala, turmeric, salt, and pepper. Add the diced tofu and toss to coat. Let marinate for at least 15 minutes, or up to a few hours.
2. Preheat your oven to 400°F (if baking) or preheat a grill (if grilling).
3. If baking, place the marinated tofu on a lined baking sheet and bake for 25 minutes, flipping halfway through. If grilling, place the marinated tofu on skewers and grill for about 5-7 minutes per side, or until nicely charred.
4. To make the sauce, start by soaking the cashews in hot water for at least 10 minutes.
5. In a skillet, heat some oil over medium heat. Add diced onion and sauté until soft and translucent, about 5 minutes. Add minced garlic and grated ginger and cook for another minute or so, until fragrant.
6. Add the cumin, coriander, garam masala, turmeric, cayenne pepper (if using), salt, and pepper to the skillet and stir to combine.
