Are you craving some delicious Indian food but trying to stick to a healthy diet? Look no further than this amazing Chicken Tikka Masala recipe! Not only is this dish Paleo and Whole30 compliant, but it’s also quick and easy to make.

First off, we need to start with the perfect chicken. Cut 2 lbs of boneless, skinless chicken breast into bite-sized pieces and season with salt and pepper. Heat up a skillet with 1 tablespoon of coconut oil over medium-high heat, and cook the chicken until it’s browned on all sides. Remove from the heat and set aside.

Now it’s time to make the sauce. In a separate large pot, melt 2 tablespoons of ghee over medium heat. Add 1 diced onion and cook until translucent. Then add in 2 tablespoons of tomato paste, 2 minced garlic cloves, and 1 tablespoon of minced ginger. Cook for another 2 minutes.

Next, it’s time to add in the spices. Mix in 1 tablespoon of garam masala, 1 teaspoon of ground cumin, 1 teaspoon of ground coriander, 1/2 teaspoon of turmeric, and 1/2 teaspoon of paprika. Stir the spices into the onion mixture until they are fragrant.

Now it’s time to add the liquids. Pour in 1 can of coconut milk and 1 can of diced tomatoes. Stir everything together until well combined, then add in 1 tablespoon of coconut sugar.

Finally, it’s time to add the chicken back into the pot. Let it simmer for 10-15 minutes until the chicken is fully cooked and the sauce has thickened.

Serve your Chicken Tikka Masala over cauliflower rice and top it off with some fresh cilantro.

In a bowl, mix together 1 cup of almond flour, 1 cup of tapioca starch, 1/2 teaspoon of salt, and 1/2 teaspoon of baking powder. In a separate bowl, mix together 1/2 cup of almond milk and 1 egg. Pour the wet ingredients into the dry ingredients and stir until well combined.

Heat up a skillet over medium-high heat and add in 1 tablespoon of ghee. Spoon the batter onto the skillet and cook for 1-2 minutes on each side until golden brown.
