Chicken Tikka Masala
Ingredients:
- 1 pound of boneless chicken breasts, cubed
- 1/2 cup of plain yogurt
- 1 tablespoon of grated ginger
- 1 tablespoon of minced garlic
- 1 teaspoon of ground cumin
- 1 teaspoon of ground coriander
- 1 teaspoon of paprika
- 1/4 teaspoon of cayenne pepper
- 1 teaspoon of salt
- 1 tablespoon of ghee or vegetable oil
- 1 medium onion, chopped
- 1 (14.5 ounce) can of diced tomatoes
- 1/2 cup of heavy cream
- 1/4 cup of chopped cilantro
Instructions:
1. In a large bowl, whisk together the yogurt, ginger, garlic, cumin, coriander, paprika, cayenne pepper, and salt.
2. Add the cubed chicken to the mixture and toss until coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours.
3. Preheat a large skillet over medium-high heat and add the ghee or vegetable oil.
4. Add the chopped onion to the skillet and cook until softened and translucent, about 5 minutes.
5. Add the marinated chicken and cook until browned on all sides, about 7-10 minutes.
6. Pour in the diced tomatoes and stir to combine. Bring to a boil, then reduce heat to low and simmer for 15 minutes, stirring occasionally.
7. Pour in the heavy cream and stir to combine. Simmer for an additional 5 minutes.
8. Garnish with chopped cilantro and serve hot with basmati rice or naan bread.
