Today, I want to share with you two absolutely delicious recipes that I recently discovered. Both of these recipes feature one of my favourite ingredients – tofu! Tofu is incredibly versatile, healthy and can be used to create some seriously amazing dishes. So without further ado, let’s dive into these recipes.
Smoked Tofu Paella
First up, we have a mouth-watering smoked tofu paella. The rich, beautiful flavours of this dish are sure to amaze your taste buds and leave you feeling satisfied. Here’s how you can make it:
Ingredients:
- 1 red onion, diced
- 2 tbsp olive oil
- 1 red pepper, sliced
- 2 garlic cloves, crushed
- 1 tsp smoked paprika
- 1cup Arborio rice
- 1 cup frozen peas
- 1 tbsp tomato puree
- 1 pack Cauldron smoked tofu, cubed
- 2 1/2 cups vegetable stock
Instructions:
- Heat the olive oil in a large frying pan or paella pan over medium-high heat.
- Add the onion and sauté for 2-3 minutes until softened.
- Add the sliced red pepper and garlic and sauté for a further 2 minutes.
- Stir in the smoked paprika and Arborio rice until thoroughly combined.
- Gradually pour in the vegetable stock and stir in the tomato puree.
- Add the frozen peas and cubed smoked tofu, reduce the heat and simmer gently for 30-40 minutes or until the rice is tender and the liquid has been absorbed.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
Sweet Ginger Tofu Stir Fry
Next up, we have a delicious sweet ginger tofu stir fry that’s packed with flavour. This recipe is quick and easy to make and is perfect for a busy weeknight when you don’t have a lot of time to cook. Here’s how to make it:
Ingredients:
- 1 pack Cauldron firm tofu, cubed
- 2 tbsp vegetable oil
- 2 garlic cloves, crushed
- 1 tbsp grated fresh ginger
- 1 red pepper, sliced
- 1 yellow pepper, sliced
- 2 cups broccoli florets
- 1 cup carrots, sliced
- 2 tbsp soy sauce
- 2 tbsp honey
- 1 tbsp sesame oil
Instructions:
- Heat the vegetable oil in a large wok or frying pan over high heat.
- Add the cubed tofu and sauté for 2-3 minutes until golden brown.
- Add the garlic and grated ginger and stir fry for a further 2 minutes.
- Add the sliced red pepper, yellow pepper and sliced carrots and stir fry for 2-3 minutes until they start to soften.
- Add the broccoli florets and stir fry for a further 2 minutes.
- Mix together the soy sauce, honey and sesame oil and pour over the stir fry. Toss everything together and cook for a further 2-3 minutes.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
