Loaded Baked Potato
Ingredients:
- 4 large russet potatoes
- 4 slices cooked bacon, chopped
- 1 cup shredded cheddar cheese
- 1/4 cup chopped green onions
- 1/2 cup sour cream
- Salt and pepper, to taste
Instructions:
- Preheat the oven to 400°F.
- Scrub the potatoes clean and dry them.
- Pierce the potatoes a few times with a fork or knife.
- Bake the potatoes for 60-75 minutes, until they are cooked through and tender.
- Cut a slit in the top of each potato and fluff up the insides with a fork.
- Top each potato with bacon, cheese, green onions, and a dollop of sour cream.
- Season with salt and pepper, to taste.
Baked Potato Soup
Ingredients:
- 4 large russet potatoes, peeled and cubed
- 4 slices cooked bacon, chopped
- 1/2 cup diced onion
- 1/2 cup diced celery
- 1/2 cup diced carrots
- 4 cups chicken broth
- 1 cup milk
- 1/2 cup sour cream
- Salt and pepper, to taste
Instructions:
- In a large pot, cook the bacon until crispy. Remove and set aside.
- Add the onion, celery, and carrots to the pot and cook until tender.
- Add the potatoes and chicken broth to the pot. Bring to a boil and simmer for 15-20 minutes, until the potatoes are cooked through.
- Use an immersion blender or transfer the soup to a blender to puree until smooth.
- Stir in the milk and sour cream, and season with salt and pepper to taste.
- Top with bacon and additional sour cream, if desired.
