• 2 pounds ground beef
• 1 large onion, chopped
• 4 garlic cloves, minced
• 2 tablespoons olive oil
• 2 tablespoons chili powder

• 1 teaspoon dried oregano
• 1 teaspoon kosher salt
• 1/4 teaspoon freshly ground black pepper
• 2 (14-ounce) cans diced tomatoes, undrained
• 1 (14-ounce) can beef broth
• 2 (15-ounce) cans kidney beans, rinsed and drained
• 1 (6-ounce) can tomato paste

Instructions

1. In a large dutch oven over medium-high heat, add olive oil and sauté the chopped onions and minced garlic until fragrant.
2. Add the ground beef to the pot, break it up with a spoon, and cook until browned and crumbly.
3. Stir in the chili powder, smoked paprika, ground cumin, dried oregano, kosher salt, and freshly ground black pepper.
4. Add the diced tomatoes with their juices, beef broth, kidney beans (rinsed and drained), and tomato paste to the pot, mix well, and bring the chili to a boil.
5. Reduce heat to low, cover the pot, and simmer the chili for 1-2 hours, stirring occasionally.
6. Finally, remove the lid and let the chili simmer for another 30 minutes, or until it reaches your desired thickness.

Notes

This beef chili recipe is perfect for batch cooking, you could double the recipe and freeze half for later.
