Cheesecake Cookie Cups
Ingredients
- 1 roll (16.5 oz) refrigerated sugar cookie dough
- 1 package (8 oz) cream cheese, softened
- 1/4 cup granulated sugar
- 1 egg
- 1/2 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F. Grease a mini muffin tin.
- Cut sugar cookie dough into 24 slices. Press each slice into the bottom and up the sides of each muffin cup.
- In a separate bowl, beat cream cheese, sugar, egg, and vanilla until fluffy.
- Fill each cookie cup with about 1 tablespoon of the cream cheese mixture.
- Bake for 15-20 minutes or until cookie cups are golden brown and filling is set.
- Cool in muffin tin for 5 minutes, then remove to cooling rack and cool completely.
- Top with your favorite fruit or topping and enjoy!
Reese’s Peanut Butter Cup Cheesecake
Ingredients
- 1 1/2 cups graham cracker crumbs
- 5 tablespoons unsalted butter, melted
- 1/4 cup sugar
- 3 packages (8 oz each) cream cheese, softened
- 1 1/4 cups sugar
- 1/2 cup creamy peanut butter
- 2 teaspoons vanilla extract
- 4 eggs, room temperature
- 12 Reese’s Peanut Butter Cups, chopped
Instructions
- Preheat oven to 350°F. Grease a 9-inch springform pan.
- In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press onto the bottom and about 2 inches up the sides of the prepared pan. Refrigerate for 30 minutes.
- Beat cream cheese, sugar, peanut butter, and vanilla until fluffy. Add eggs, one at a time, beating well after each addition. Fold in chopped Reese’s Peanut Butter Cups.
- Pour filling over crust.
- Bake for 60-70 minutes or until set in center. Cool on a wire rack for 10 minutes.
- Run a knife around edge of pan to loosen. Cool 1 hour longer. Refrigerate overnight and serve chilled.
