• 1/2 cup vegan butter, melted

• 3 tablespoons cornstarch
• 1/2 teaspoon salt
• 1/4 cup unsweetened applesauce
• 1/2 teaspoon vanilla extract

For the apple crumble topping:

• 1 cup all-purpose flour
• 1/2 cup granulated sugar
• 1/4 teaspoon salt
• 1/2 cup vegan butter, melted
• 2 medium-sized apples, peeled and diced

Instructions:

1. Preheat the oven to 350°F (180°C).
2. In a bowl, mix the crust ingredients together until well combined. Press the mixture into the bottom of a 9-inch (23 cm) springform pan. Bake for 10-12 minutes, then remove from the oven and let cool.
3. In a separate bowl, beat the cream cheese until smooth and creamy. Add the sugar, cornstarch, salt, applesauce, and vanilla extract, and continue to mix until everything is well combined.
4. Pour the cream cheese filling into the crust and smooth out the top with a spatula.
5. In a separate bowl, make the apple crumble topping by mixing the flour, sugar, and salt together. Add the melted butter and mix until the mixture is crumbly. Fold in the diced apples.
6. Sprinkle the apple crumble topping over the cheesecake and bake for 50-60 minutes or until the cheesecake is set.
7. Remove from the oven and let cool to room temperature before transferring to the fridge to chill for at least 2 hours.
8. When you’re ready to serve, remove the cheesecake from the fridge and let it sit at room temperature for about 10-15 minutes.
