Oh boy, do I have a treat for y’all today! I done gone and discovered the most amazing Instant Pot cheesecake recipe. It’s so easy my 10-year-old nephew could make it and it tastes like a slice of heaven.
Cheesecake in the Instant Pot
First things first, let me tell you about this magical machine called the Instant Pot. It’s a pressure cooker, a slow cooker, a rice cooker, a yogurt maker and like a million other things all rolled into one. And it makes the best dang cheesecake you’ve ever tasted.
Alright, now that I’ve got your attention, here’s what you’ll need:
Ingredients:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 3 (8 oz) packs of cream cheese, at room temperature
- 1 cup granulated sugar
- 1 tsp pure vanilla extract
- 3 large eggs, at room temperature
- 1/2 cup sour cream, at room temperature
Instructions:
- In a medium-sized bowl, mix together the graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture into the bottom of a 7-inch springform pan.
- Using a hand mixer or stand mixer, beat the cream cheese, 1 cup of sugar, and vanilla extract together on medium-high speed until smooth and creamy. Add the eggs, one at a time, and beat until just combined. Stir in the sour cream.
- Pour the cheesecake mixture into the prepared crust and smooth out the top.
- Next, pour 1 1/2 cups of water into the Instant Pot. Place the trivet in the bottom of the pot and then use a sling to lower the cheesecake into the pot.
- Secure the lid on the Instant Pot and set to Manual, high pressure for 40 minutes. Let the pressure release naturally for 10 minutes and then manually release the remaining pressure.
- Carefully lift the cheesecake out of the Instant Pot and let it cool to room temperature. Once cooled, place it in the fridge for at least 3 hours to chill before serving.
- Slice and serve your delicious Instant Pot cheesecake to family and friends and watch their faces light up with delight.
