- 1/2 tsp black pepper
Instructions:
- Preheat oven to 425°F.
- In a small bowl, mix together minced garlic, rosemary, olive oil, salt, and pepper.
- Loosen the skin of the chicken and spread half of the garlic mixture under the skin. Rub the rest of the mixture on the outside of the bird.
- Stuff the chicken cavity with the sliced lemon.

Lemon Chicken with Lemon Butter Sauce
Ingredients:
- 4 chicken breasts
- 1/4 cup all-purpose flour
- 2 tsp salt
- 1/2 tsp paprika
- 1/2 tsp black pepper
- 4 tbsp unsalted butter
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1 lemon, juiced and zested
Instructions:
- Pound chicken breasts to even thickness. In a shallow dish, mix together flour, salt, paprika, and black pepper.
- Dredge the chicken in the flour mixture, shaking off any excess.
- In a large skillet, melt 2 tablespoons of butter over medium-high heat. Cook the chicken until golden brown on both sides, about 3-4 minutes per side. Remove the chicken and set aside.
- In the same skillet, melt the remaining 2 tablespoons of butter. Whisk in the chicken broth, heavy cream, lemon juice, and zest. Bring to a simmer and let cook for 5 minutes until the sauce has thickened.
- Return the chicken to the pan and spoon the sauce over the top. Cook for an additional 5-7 minutes or until the chicken is cooked through. Serve with additional lemon slices and chopped parsley, if desired.
