Frittatas are one of my favorite dishes to make because they are so versatile and easy to customize. Today, I want to share with you my Broccoli, Cheddar & Spinach Frittata recipe, but don’t worry if you don’t have these exact ingredients on hand. Feel free to switch them up and make it your own!
Broccoli, Cheddar & Spinach Frittata
Ingredients:
- 1 tablespoon olive oil
- 1 small onion, chopped
- 1 garlic clove, minced
- 1 cup chopped broccoli florets
- 1 cup packed baby spinach
- 8 large eggs
- 1/2 cup shredded cheddar cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions:
- Preheat oven to 350°F.
- In a 10-inch oven-safe skillet, heat olive oil over medium heat. Add onion and garlic and cook until onion is translucent, about 5 minutes.
- Add broccoli florets and cook until tender, stirring occasionally, about 5 minutes.
- Add spinach and cook until wilted, about 1-2 minutes.
- In a large mixing bowl, whisk together eggs, cheddar cheese, salt, and pepper.
- Pour egg mixture over vegetables in the skillet and lightly stir to distribute vegetables.
- Bake in preheated oven until frittata is set and top is slightly golden, about 20-25 minutes.
- Serve hot and enjoy!
If you prefer to cook your frittata on the stovetop, simply follow the instructions until step 6 and cook over medium heat until the eggs are set. Flip the frittata over onto a plate and then slide it back into the skillet to cook the other side until it is slightly golden and set.
Customization Ideas:
- Substitute broccoli for any other vegetable you have on hand, such as diced bell peppers or sliced mushrooms.
- Use any other type of cheese you prefer, such as feta or goat cheese.
- Add some protein by mixing in cooked bacon, sausage, or ham.
- Make it spicy by adding a pinch of cayenne pepper or some sliced jalapeños.
