  • 1 zucchini, thinly sliced
  • 1/2 cup shredded cheddar cheese

Preheat your oven to 350°F. In a large mixing bowl, whisk together the eggs, milk, salt, and pepper until well-combined. Heat the olive oil in a 10-inch ovenproof skillet over medium heat. Add the onion, bell pepper, and zucchini and cook until softened, about 5 minutes. Pour the egg mixture into the skillet and sprinkle the cheese on top. Cook for 2-3 minutes or until the edges start to set. Transfer the skillet to the oven and bake for 12-15 minutes or until the frittata is set in the middle. Slice and serve!
