Cast Iron Frittata
Ingredients:
- 1 tablespoon olive oil
- 8 eggs
- 1 tablespoon heavy cream
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1/2 cup cooked and roughly chopped broccoli
- 1/2 cup cooked and roughly chopped ham
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh parsley
Instructions:
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, whisk together the eggs, heavy cream, Parmesan cheese, kosher salt, and black pepper until well combined.
- Heat the olive oil in a 10-inch (25 cm) cast iron skillet over medium-high heat. Add the broccoli, ham, and red onion, and cook for 3-4 minutes or until the vegetables are tender.
- Pour the egg mixture over the vegetables in the skillet. Top with chopped parsley.
- Cook on the stovetop for about 5 minutes or until the bottom of the frittata is set.
- Transfer the skillet to the oven and bake for about 10-15 minutes or until the frittata is golden brown and puffy.
- Remove from the oven and let the frittata cool for 5 minutes.
- Run a knife around the edges of the skillet to loosen the frittata.
- Slide the frittata onto a serving plate and slice it into wedges.
