First off, let me say that this recipe is not for the faint of heart. It’s spicy! But don’t worry, if you’re not a fan of heat, you can adjust the amount of spice to your liking.
For this recipe, you will need:
– 4 ripe avocados
– 1 medium-sized tomato, chopped
– 1/4 cup red onion, chopped
– 1 jalapeño pepper, seeded and minced
– 2 cloves garlic, minced
– 1/4 cup fresh cilantro, chopped
– Juice of 1 lime
– Salt, to taste
– Tortilla chips, for serving
To make the guacamole:
1. Cut the avocados in half, remove the pits, and scoop out the flesh into a bowl.
2. Mash the avocado with a fork or potato masher until it’s mostly smooth with some chunky bits remaining.
3. Add the chopped tomato, red onion, jalapeño, garlic, and cilantro to the bowl and mix well.
4. Squeeze in the lime juice and season with salt to taste.
5. Give the guacamole one final mix and transfer to a serving bowl.
Now it’s time to tackle the spice. This guacamole gets its heat from a secret ingredient: chipotle peppers in adobo. Don’t worry if you’ve never heard of them before, they can be found in most grocery stores in the international foods aisle. They come in a can and are packed in a spicy sauce. For this recipe, you will only need 1-2 peppers from the can (depending on your spice tolerance).
For the spicy addition:
1. In a small bowl, mix together 1-2 minced chipotle peppers with 1 tablespoon adobo sauce (the sauce from the can).
2. Add the chipotle mixture to the guacamole and mix well.
3. Taste and adjust the seasoning as needed.
