Pecan pie is one of my favorite desserts, and I have been on the lookout for the perfect recipe. After much searching, I have come across two recipes that I am excited to try out.
First up is an easy pecan pie recipe that I found on No. 2 Pencil. To make this delicious dessert, you will need:
Ingredients:
-1 9-inch pie crust
-3 eggs
-1 cup light corn syrup
-1/2 cup granulated sugar
-1/4 cup brown sugar
-1/4 cup unsalted butter, melted
-1 tsp vanilla extract
-1/4 tsp salt
-2 cups pecans
Instructions:
1. Preheat your oven to 350 degrees Fahrenheit.
2. Place your pie crust into a 9-inch pie dish and set aside.
3. In a large bowl, whisk together the eggs, corn syrup, granulated sugar, brown sugar, melted butter, vanilla extract, and salt until well combined.
4. Stir in the pecans.
5. Pour the mixture into the prepared pie crust.
6. Bake for 50-60 minutes or until the filling is set and the crust is golden brown.
7. Allow to cool completely before slicing and serving.
Next up is a pecan pie recipe that I found on BBC Food. This recipe is a bit more involved but promises to be worth the effort.
Ingredients:
-1 1/2 cups all-purpose flour
-1/4 cup powdered sugar
-1/4 teaspoon salt
-1 stick unsalted butter, chilled and cubed
-2-3 tablespoons ice water
-1 1/2 cups pecan halves
-3 large eggs
-1/3 cup granulated sugar
-1/2 cup light corn syrup
-4 tablespoons unsalted butter, melted and cooled slightly
-1 teaspoon vanilla extract
-1/4 teaspoon salt
Instructions:
1. Preheat your oven to 375 degrees Fahrenheit.
2. In a large bowl, whisk together the flour, powdered sugar, and salt.
3. Using a pastry cutter or your fingers, cut in the chilled, cubed butter until the mixture resembles coarse sand.
4. Gradually add the ice water, one tablespoon at a time, until the dough comes together.
5. Flatten the dough into a disk and wrap in plastic wrap.
6. Chill the dough for at least 30 minutes.
7. Roll out the dough to fit into a 9-inch pie dish.
8. Trim the edges and prick the bottom with a fork.
9. Bake the crust for 8-10 minutes or until lightly golden.
10. Allow the crust to cool while you prepare the filling.
11. In a large bowl, whisk together the eggs, granulated sugar, corn syrup, melted butter, vanilla extract, and salt until well combined.
12. Stir in the pecan halves.
13. Pour the mixture into the prepared pie crust.
14. Bake for 30-35 minutes or until the filling is set and the crust is golden brown.
15. Allow to cool completely before slicing and serving.
