– 2 cloves garlic
– 1 Tbsp. fresh thyme
– 1/4 cup chopped fresh parsley
– 1/4 cup chopped fresh cilantro
– 2 Tbsp. lime juice
– salt and pepper to taste
1. In a blender or food processor, blend all marinade ingredients until smooth.
2. Rinse chicken and pat dry. Place chicken in a large plastic bag and pour marinade over chicken. Seal bag, pressing out any excess air. Massage marinade into chicken to distribute evenly. Marinate for at least 4 hours.
3. Remove chicken from marinade and discard used marinade. Grill chicken over medium-high heat until charred and cooked through, about 6-8 minutes per side. Alternatively, bake chicken in the oven at 375°F for 45-50 minutes, turning occasionally, until cooked through and crispy.
4. While chicken is cooking, make green seasoning by blending all ingredients until smooth.
5. Brush green seasoning over chicken during the last few minutes of cooking on the grill or in the oven.
